What You Need:
- 1 1/4 cups whole oats oats
- 1 1/4 cups milk (I use rice milk but dairy works fine too)
- 1 egg
- 1/2 cup vegetable oil
- 1/2cup packed brown sugar
- 3/4 cup semisweet chocolate chips
- 1 tsp cinnamon
- 1 1/4 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F. Oil your muffin tin.
- Stir egg, oil, brown sugar, and chocolate chips into the oat and milk mixture.
- Combine flour, baking powder, cinnamon and salt. Add oat mixture to flour mixture, stirring until just moist.
- Bake at 400 degrees F for 20 to 25 minutes, or until ready. Enjoy!!

ReplyDeleteThese look great! I've been looking for a good oat muffin recipe. Did you use quick oats or slow oats?
ReplyDeleteI used slow oats. Make sure you soak them though... if you don't, there will be oat-crunches in your muffins!
