Spring Pear & Arugula Salad


1/4 cup hulled pumpkin seeds (pepitas)
4 cups arugula
1-2 pears, thinly sliced
1/8 pound of manchego cheese, thinly sliced

Toast pumpkin seeds in 1 tbl of olive oil for 4 minutes over medium heat, stirring frequently. Remove from oil with slotted spoon and let drain.
Top arugula with pumpkin seeds, pears and manchego.

For the dressing whisk together:
1/4 cup olive oil
3 tbl sherry vinegar
1 tsp local honey
2 tsp stone ground mustard
salt and pepper to taste

Serves 4. Yum!!
